Mango Lychee Wine Slushies with Ginger Lime

These refreshing Mango Lychee Wine Slushies have a touch of ginger and lime to give your summer drinks a new twist. Perfect for pool parties & celebrations!

Ingredients

For Mango Layer

  • 1 pint San Bernardo Mango Fiesta Ice Cream frozen
  • 2 tablespoons Lime Juice
  • 1 cup White Wine (I used Chardonnay)

For Lychee Layer

  • 20 oz Can Lychees
  • 1/8 teaspoon Ginger peeled and grated
  • 1 cup White Wine (I used Chardonnay)
  • 1 cup Ice Cubes

Garnish

  • 4 Maraschino Cherries
  • 1 tablespoon Mango Cubed
  • 4 Lychees from can
  • 4 slices Lime

For Mango Layer

  1. Place all the mango ingredients in a high speed blender and blend until pureed. Mixture should be thick and creamy. If not, add some ice cubes and blend again

  2. Pour this mixture in the bottom of 4 glasses 

For Lychee Layer

  1. Drain the lychees from the can saving the syrup on the side. Reserve 4 lychees for the garnish

  2. In the bottom of the blender place all the lychees, the ginger, 1/2 cup of the syrup, the wine, and ice cubes. Blend on high speed until mixture resembles a slushie. If mixture is too liquid add more ice cubes and blend again

  3. Pour the lychee slushie on top of the mango slushie

  4. Garnish with the cherry, mango, lychee and fresh lime slices

  5. Serve immediately

  6. Enjoy! 

Recipe Notes

You add more or less wine to suit your taste.
