Ingredients

  • 4 tablespoons unsalted butter 1/2 stick
  • 1 cup confectioners sugar
  • 1/2 cup almond flour
  • 1/3 cup all-purpose flour
  • 3 egg whites
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking powder
  • 12 raspberries

Instructions

  1. Preheat oven to 400 degrees Fahrenheit
  2. Spray a mini muffin or financier mold with non-stick spray
  3. Place butter in a pan over medium-low heat
  4. Melt butter and whirl the pan occasionally
  5. When butter turns brown and develops a nutty aroma, remove from heat and strain. Cool for a few minutes
  6. In a bowl, whisk the egg whites until frothy
  7. In another bowl, combine the flour, almond flour, confectioners sugar, baking powder, and salt.
  8. Gently mix in the cooled brown butter, egg whites, and vanilla using a whisk or a wooden spoon. Do not overmix
  9. Pour the batter 3/4 full of each crevice of the mold
  10. Place the raspberry inside the batter
  11. Bake for 10-15 minutes or until the tops becomes brown and the financiers are fluffy and springy to the touch
  12. Remove from oven
  13. Unmold
  14. Enjoy!
