Plantains Foster Ice Cream Tacos

These delicious Ice Cream tacos are filled with warm plantains foster and topped with yummy Chips Ahoy! The perfect dessert or snack with a latin twist

Ingredients

For Tacos

  • 4 Corn tortillas
  • Sugar +Cinnamon

For Plantains Foster

  • 1 Ripe Plantain
  • 1/4 Cup butter
  • 6 tablespoons brown sugar
  • 1 teaspoon rum or vanilla extract optional
  • 1/2 teaspoon cinnamon

Assembly

  • 6 Chips Ahoy! Cookies
  • 2 cups Vanilla Ice Cream

Instructions

  1. For taco cups
  2. Preheat oven to 400 Degrees F
  3. Flip over a muffin tin and spray with nonstick spray
  4. Soften the tortillas but placing them inside a damp paper towel and microwaving them for 30 seconds
  5. Place the soft tortillas on a cutting board and spray them with nonstick spray
  6. Sprinkle with sugar and cinnamon
  7. Flip the tortilla over and repeat the same process with the cooking spray, sugar, and cinnamon
  8. Nestle a tortilla in the space between 4 cups of the muffin tin to form a bowl shape
  9. Repeat with the other tortillas
  10. Bake for 12-15 minutes or until crisp
  11. Remove from oven and let them cool
  12. For Plantains Foster
  13. Slice the plantain
  14. Place a skillet over medium heat and add the butter and brown sugar
  15. When the butter and brown sugar melts, add the plantain slices and cook until the plantains have softened. About 4-5 minutes. Stir often
  16. Add the rum extract and cinnamon. Stir until combined
  17. Assembly:
  18. Place the taco cups on a serving platter
  19. Add 1-2 scoops of ice cream
  20. Add the hot bananas foster
  21. Top with crumbled Chips Ahoy!
  22. Serve immediately
  23. Enjoy!!
