This moist Blood Orange Almond Flourless Cake is delicious and easy to make. The perfect Spring dessert to enjoy with tea and coffee. It's gluten free too

Ingredients

  • 6 Large eggs
  • 2 Medium Blood Oranges
  • 9.5 oz of granulated sugar (by weight not volume)
  • 8.8 oz of Bob's Red Mill Almond Meal (by weight not volume)
  • Pinch of salt
  • 1 teaspoon of Baking Powder
  • 1/4 cup of Toasted Slivered Almonds optional
  • Powdered Sugar for dusting optional

Instructions

  1. Wash oranges
  2. Boil them in plenty of water for 2 hours or until tender
  3. Remove from pot and cut away the top and bottom stem
  4. Cut orange in 4 and place the pieces in a food processor or blender until pureed. Do not remove the skin, it gives the cake plenty of flavor and color
  5. Meanwhile, sift the Almond Meal
  6. Preheat oven to 375 Degrees F.
  7. Butter or oil a 9 Inch springform pan
  8. Place the eggs and sugar in a bowl
  9. Using the mixer, mix on medium heat for 3-5 minutes or until the egg's volume has increased
  10. Add the orange puree and continue mixing
  11. Add the salt, baking powder and mix
  12. Finally, add the almond and mix until combined
  13. Place the batter on the prepared pan
  14. Sprinkle the slivered almonds on top (optional)
  15. Bake for 24-28 minutes or until the top has browned and a knife inserted in the middle comes out clean
  16. Let the cake cool on a baking rack for 30 minutes
  17. Run a knife through the pan and the edges of the cake
  18. Remove the sides of the cake mold
  19. Sprinkle powdered on top
  20. Enjoy!
