Line the loaf pan with parchment paper

Grease a loaf pan with nonstick spray

In a bowl place the melted ice cream. Stir with a wooden spoon

Slowly add the self-rising flour until completely combined. Do not overmix

Pour batter on the loaf pan

Bake for 38-40 minutes or until a toothpick inserted in the middle comes out clean

Remove from oven and let it rest on cooling rack for 10 minutes

Remove from loaf pan and let it completely cool

For ganache

Place chocolate in a bowl

Heat the heavy cream on the microwave

When the cream boils, pour it over the chocolate

Let the mixture rest for 2 minutes to allow the chocolate to melt

Mix with a whisk until combined

Pour over cooled bread

Let it set before slicing
