Ingredients
For Peanut Butter Cookie Crust
4tablespoonsstick of unsalted buttersoftened
1/4teaspoonvanilla extract
1/2cupplus 2 tablespoons of all-purpose flour
1/2teaspoonbaking soda
1/4cupsmooth peanut butter
1/4cupgranulated sugar
1/4cupbrown sugar
1egg
Pinch of salt
Filling
1 1/2cupsof semi-sweet chocolate chips
1cupof Caramel Bits
Peanut Butter Cream
4tablespoonsButtersoftened
1/4cup+ 1 tablespoon of peanut butter
3/4cupspowdered sugar
1tablespoonsmilk
2cupsof Caramel Popcorn
Instructions
Preheat Oven to 350 Degrees Fahrenheit
Line an 8x8" pan with aluminum foil and spray the foil with nonstick spray or butter
In a small bowl mix the flour, baking soda, and salt. Set aside
Using the bowl of a mixer, cream the butter and sugars together for 3-4 minutes until creamy. Scrape the sides of the bowl down with a spatula
Add the egg, vanilla and peanut butter. Keep mixing on medium speed until combined
Place this entire mixture on the 8x8 pan. With a spatula press down until the dough is completely flat and covers the entire surface
Bake for 15-18 minutes or until the top starts to brown
Remove mixture from oven and immediately sprinkle the caramel bits and chocolate chips on top. Wait 1-2 minutes for the chocolate to start melting, then spread with a spatula until the chocolate covers the entire surface
Let this mixture cool completely
For Peanut Butter Cream
Place the ingredients in a mixer until combined
Spread this mixture on top
Add the popcorn and press down gently so it sticks to the peanut butter cream
