Tapioca Spiced Poke Cake

Tapioca Spiced Poke Cake - Spice cake is drenched with creamy tapioca pudding and then topped with cream cheese frosting. Perfect and easy dessert for parties and get togethers.

Ingredients

  • For Cake
  • 1 Box of Spiced Cake Mix
  • 3 Large Eggs
  • 1 Cup of Milk
  • 1/3 Cup of Unsalted Butter softened
  • 1 1/2 - 22 oz Tubs of Kozy Shack® Tapioca Pudding
  • For Cream Cheese Frosting
  • 1/2 Cup of Unsalted Butter at room temperature
  • 8 oz of cream cheese at room temperature
  • 1 Teaspoon of Vanilla if you like a stronger flavor add another teaspoon
  • 3 Cups of Powdered Sugar sifted
  • Colorful sprinkles for garnish (optional)

Instructions

  1. For Cake
  2. Preheat Oven to 350 degrees Fahrenheit
  3. Grease a 13X9" Pan with nonstick cooking spray
  4. In a bowl, add the eggs, milk and butter and mix using an electrical mixer
  5. Slowly add the cake mix and mix until completely combined
  6. Pour batter on the pan
  7. Bake for 25-30 minutes or until a toothpick inserted inserted in the middle of the cake comes out clean
  8. Meanwhile, pour the pudding into a bowl
  9. Place the bowl on top of a pan of simmering water and mix with a spoon to warm up the pudding so it becomes a bit more liquid
  10. Remove from heat and let it cool
  11. When cake comes out of the oven, poke holes all over with a toothpick or fork
  12. Pour the pudding all over the cake. If you can, insert tapioca pearls inside the holes
  13. Let the cake cool at room temperature and then place in the fridge for a minimum of 4 hours
  14. For Cream Cheese Frosting
  15. Place cream cheese and butter into a mixer and mix on medium-high speed for 3-4 minutes or until creamy
  16. Add the vanilla and mix
  17. Lower the speed of the mixer and slowly add the powdered sugar
  18. Assembly
  19. Using a spatula, spread the frosting on the top of the cooled cake
  20. Pour sprinkles all over (optional)
  21. Refrigerate cake until ready to use
  22. Enjoy!
