Holiday Spiced Toffee Recipe

This delicious Holiday Spiced Toffee Recipe has nuts and white chocolate to kick the flavor up a notch. I love to make it in little muffin tins to give out.

Ingredients

  • 2 Sticks of butter unsalted
  • 1 1/4 Cups of Brown Sugar
  • 1 Tablespoon of Corn Syrup
  • A Pinch of Salt
  • 1 Cup of White Chocolate Chips
  • 1 1/2 Cup of Mixed Nuts

Instructions

  1. In a heavy saucepan over medium heat, cook the butter, sugar, corn syrup and salt. Mix with a wooden spoon
  2. Insert a candy thermometer and cook until it reaches 300 degrees or Hard Crack stage*
  3. Meanwhile, add a few nuts to the bottom of a greased mini muffin tin
  4. When toffee reaches the proper temperature, carefully pour into each mini muffin crevice
  5. Cool for 3 minutes and add the white chocolate chips on top of the toffee. Wait 2-3 minutes until the toffee melts and spread the chocolate with the back of a spoon
  6. Sprinkle more nuts on top
  7. Let it set in the refrigerator for a minimum of 2 hours
  8. Enjoy!

Recipe Notes

*If you don't have a candy thermometer simply test the mixture every minute but pouring a little toffee mixture in a glass of water. If the toffee turns solid and hard it's done.
