Chicken Soba Noodle Soup - Easy to make and delicious! A flavorful broth is served with soba noodles, chicken, bok choy and mushrooms in a comforting soup that will warm you during chilly nights.

Ingredients

  • 1 teaspoon of Ginger grated
  • 8 cups chicken or vegetable stock
  • 1 Lb . of Cooked Chicken diced or shredded
  • 3 tablespoons of soy sauce
  • 1 tablespoon of Olive Oil
  • 2 cloves medium garlic grated
  • 8 oz of shiitake mushrooms sliced
  • 8 oz of Portobello mushrooms sliced
  • 1 baby bok choy chopped
  • 1 Tablespoon rice wine vinegar
  • 1 Lb . of Soba Noodles uncooked
  • 1-2 Tablespoons of Sriracha
  • Cilantro and Green Onion for Garnish

Instructions

  1. In a heavy soup pot, heat the olive oil on low heat
  2. Add the garlic and ginger. Cook until they soften. Stir often so they don't burn
  3. Throw in the mushrooms and stir until they reduce in size and soften. About 2-3 minutes
  4. Add the chicken, bok choy and mix
  5. Add the broth, soy sauce, sriracha, rice vinegar and soba noodles
  6. Simmer on medium low heat for about 15 minutes or until the noodles are soft
  7. Check for seasoning and make the necessary adjustments
  8. Garnish with green onions and cilantro (optional)
  9. Enjoy!
