Ingredients

For Salad

  • 10 oz Edamame Beans cooked and cooled
  • 1 can Corn
  • 1 can Hearts of Palm sliced
  • 2 tablespoons Cilantro chopped
  • Salt + Pepper

For Dijon Vinaigrette

  • 1 tablespoon Dijon Mustard
  • 1 1/2 tablespoons Olive Oil
  • 1 tablespoon Vinegar
  • 1/2 teaspoon Sugar or Stevia
  • Touch of pepper

Instructions

  1. Mix the vinaigrette ingredients together

  2. Add the veggies and cilantro into a bowl

  3. Add the vinaigrette and mix well

  4. Refrigerate for at least 30 minutes before serving
