Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 oz Heath toffee bits or Skor
  • 2 1/2 cups light brown sugar
  • 1 cup unsalted butter at room temperature
  • 1 teaspoon vanilla
  • 2 large eggs

Instructions

  1. Preheat Oven to 375 Degrees Fahrenheit
  2. In a bowl, place the flour, baking powder and salt. Mix until combined
  3. In a mixer bowl place the butter and brown sugar. Mix on medium speed for 3-4 minutes or until the mixture becomes creamy and fluffy. Scrape down the sides of the bowl with a spatula
  4. With the mixer running, add the eggs one at a time and the vanilla
  5. Slowly add the flour mixture. Scrape the sides of the bowl with a spatula
  6. Finally add the toffee bits. Do not overmix
  7. Using an ice cream scoop or spoon, place mounds of cookie dough onto a cookie sheet lined with parchment paper
  8. Bake the cookies for 8-10 minutes or until brown at the edges but still soft in the center
  9. Remove from oven and let them cool on a cooling rack
  10. Enjoy!
