Ingredients

  • 2 cans Corn drained
  • 4 Tablespoons All Purpose Flour
  • 2 Eggs
  • 1 Teaspoon Baking Powder
  • 1 1/2 Teaspoon Vegetable Oil plus more for the griddle
  • 1/2 Teaspoon Sugar
  • Salt to taste
  • 1 Cup Shredded white cheese

Instructions

  1. Place all ingredients minus the cheese in a blender and blend until combined
  2. Heat oil or spray with non stick spray a griddle or skillet on medium low heat
  3. Using a laddle, add the batter to the pan and spread them with the back of the spoon
  4. Cook on one side until browned and then flip them over. Add the shredded cheese and let it cook for 2 minutes. Fold over one side and then on the other
  5. Enjoy!
