Shrimp & Mango Ceviche Recipe

Ingredients

For Ceviche

  • 2 lbs . of Cooked Shrimp
  • 1 Mango diced
  • 1/2 Medium Purple Onion Sliced
  • 1/4 Cup of Chopped Cilantro
  • 1 Tablespoon of Capers

For Ceviche Dressing

  • 1/2 Cup of Olive Oil
  • 1/4 Cup of Vinegar
  • Juice of 1 Lemon
  • 1 ts . of Sugar
  • 2 oz of Caper Juice about 1/4 of the jar

Instructions

  1. Whisk all dressing ingredients together in a bowl
  2. In a big bowl add the shrimp, onion, capers, cilantro and mango
  3. Toss the dressing in with the shrimp
  4. Let it marinate in the fridge for a minimum of 2 hours
  5. Enjoy!
