Baked Oatmeal with Berries

A delicious comforting breakfast that will keep energized all day! this amazing Baked Oatmeal with berries made with walnut and citrus zest

Ingredients

  • 2 cups Low Fat Milk*
  • 1/3 cup Eggland’s Best Liquid Egg Whites
  • 2 teaspoons Baking Powder
  • Pinch Salt
  • Zest of 1 Lime
  • 2 teaspoons Vanilla
  • 3/4 cup Skinnygirl Preserves
  • 1 1/2 cups McCann’s Quick & Easy Oatmeal
  • 1 cup Fisher Chef’s Naturals Walnuts, slightly chopped
  • 2 cups Mixed Berries

Instructions

  • Preheat oven to 350 degrees F.
  • Grease an 9x9" square pan.
  • In a bowl whisk the milk, egg whites, zest, vanilla, baking powder and salt.
  • Warm up the preserves for 20 seconds in the microwave (this will make it easy to incorporate in the recipe).
  • Add the preserves, walnuts and oatmeal. Mix.
  • Pour the mixture in the prepared baking pan.
  • Sprinkle the berries on top.
  • Bake for 25-35 minutes or until browned on top.
  • Enjoy!

Notes

*For the milk, you can use low-fat milk or any nut milk you may like.
I used SkinnyGirl Raspberry Bellini flavor but you may use any other flavor. 
This can be refrigerated for up to a wek and heated in an oven.
