Candied Pecan Pear Salad with Pomegranates
This tasty pomegranate Pear Salad is served with candied pecans and drizzled with a mustard dressing. The perfect autumn quick salad to serve with dinner

For Candied Pecans 2 tablespoons butter 2 tablespoons brown sugar 1/2 cup pecans For Salad 8 oz dark leafy greens washed and dried 1/4 cup pomegranate seeds 2 pears cored and sliced Candied Pecans Salt +Pepper to taste For Dijon Vinaigrette 1/2 cup olive oil 1/4 cup red wine vinegar 2 teaspoons Dijon Mustard Salt +Pepper to taste
For Candied Pecans Line a sheet pan with parchment paper
Place the brown sugar and butter in a saucepan over medium heat until sugar and butter melt
Add pecans
Stir for a few minutes or until the pecans are completely coated, about 3-4 minutes
Pour the mixture into the parchment paper
Let it completely dry at room temperature
Break off the pieces when dry
For Salad In a big bowl, add the leafy greens, the pomegranate, pecans, and pears. Mix
Slowly add the vinaigrette until the desired flavor is achieved (you may not need all the vinaigrette)
Serve and enjoy!
