Candied Pecan Pear Salad with Pomegranates

This tasty pomegranate Pear Salad is served with candied pecans and drizzled with a mustard dressing. The perfect autumn quick salad to serve with dinner

Ingredients

For Candied Pecans

  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/2 cup pecans

For Salad

  • 8 oz dark leafy greens washed and dried
  • 1/4 cup pomegranate seeds
  • 2 pears cored and sliced
  • Candied Pecans
  • Salt +Pepper to taste

For Dijon Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 teaspoons Dijon Mustard
  • Salt +Pepper to taste

Instructions

For Candied Pecans

  • Line a sheet pan with parchment paper
  • Place the brown sugar and butter in a saucepan over medium heat until sugar and butter melt
  • Add pecans
  • Stir for a few minutes or until the pecans are completely coated, about 3-4 minutes
  • Pour the mixture into the parchment paper
  • Let it completely dry at room temperature
  • Break off the pieces when dry

For Dijon Vinaigrette

  • Place all ingredients in a small container with a lid. Close container and shake vigorously or until all ingredients are completely combined

For Salad

  • In a big bowl, add the leafy greens, the pomegranate, pecans, and pears. Mix
  • Slowly add the vinaigrette until the desired flavor is achieved (you may not need all the vinaigrette) 
  • Serve and enjoy!
