Ingredients

  • 1 teaspoon fresh ginger grated
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 8 cups chicken or vegetable stock
  • 3 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 to 2 tablespoons sriracha to taste
  • 1 lb cooked chicken shredded or diced
  • 8 oz shiitake mushrooms sliced
  • 8 oz portobello mushrooms sliced
  • 1 baby bok choy chopped
  • 8 oz soba noodles
  • Cilantro and green onions for garnish

Instructions

  • Heat olive oil in a large pot over medium heat
  • Add garlic and ginger and cook for 1 minute until fragrant, do not burn
  • Add mushrooms and cook for 3–4 minutes until softened
  • Pour in the stock, soy sauce, rice vinegar, and sriracha, bring to a gentle boil
  • Add the chicken and bok choy and cook for 3–4 minutes until heated through
  • Add the soba noodles and cook according to package instructions, about 4–5 minutes
  • Taste and adjust seasoning as needed
  • Serve hot and garnish with cilantro and green onions

Notes

Do not overcook the soba noodles; they cook quickly and can become mushy
For leftovers, store noodles separately from the broth to prevent them from absorbing too much liquid
Adjust sriracha to your preferred spice level
