2 Eggs 1/4 cup Unsalted Butter 3/4 teaspoon Vanilla or Lemon Extract 1/8 teaspoon Salt 1/3 cup Sugar 1/2 cup Flour sifted 1 tablespoon Lemon Zest 1 tablespoon Orange Zest 2 tablespoons Confectioners Sugar to dust
Preheat oven to 375 degrees F
Prepare molds with butter and dust with flour. Melt butter, and allow to cool to room temperature.
Beat eggs, vanilla and salt until frothy. Gradually add sugar while beating for 8 to 10 minutes. Mixture will form ribbons when you lift the beater
Fold flour 1/3 cup at a time into egg mixture. Add both zests. Pour melted butter over batter and gently fold until well combined.
Scoop batter into molds, bake around 15 minutes, until cake is golden brown around edges. Don't over bake, it may cause cookies to become too dry.
Remove from molds to cooling rack and dust with confectioners’ sugar.
