This delicious latin rice made with coca cola is topped with raisins and toasted almonds. Great and easy side dish to any meal.

Ingredients

  • 1 Cup Long Grain Rice
  • 1/4 Cup Egg Noodles the ones used for soup
  • 1/2 Cup Almonds toasted, sliced or slivered
  • 1/2 Cup Raisins
  • 1 Cup Coke 8 oz
  • 1 1/4 Cups Water
  • 1 Bouillon Cube
  • 1 Teaspoon Vegetable Oil or more if needed
  • Salt + Pepper to taste
  • Green Onion sliced (to garnish)

Instructions

  • In a heavy saucepan, add the oil to medium heat
  • Add the noodles and cook until they soften and get toasted (don't let them burn). Stir often
  • Add the rice and mix with the noodles
  • Pour in the coke, water and bullion cube. Let the liquid come to a boil. Test the liquid for seasoning and make the necessary corrections.
  • Place a lid on top and reduce the heat down to low. Cook for 10-15 minutes or until the liquid has evaporated
  • Remove from heat, fluff with a fork
  • Mix in the raisins and almonds
  • Garnish with the green onion
  • Enjoy!
