Coca-Cola Rice
This delicious latin rice made with coca cola is topped with raisins and toasted almonds. Great and easy side dish to any meal.

- 1 Cup Long Grain Rice
- 1/4 Cup Egg Noodles the ones used for soup
- 1/2 Cup Almonds toasted, sliced or slivered
- 1/2 Cup Raisins
- 1 Cup Coke 8 oz
- 1 1/4 Cups Water
- 1 Bouillon Cube
- 1 Teaspoon Vegetable Oil or more if needed
- Salt + Pepper to taste
- Green Onion sliced (to garnish)
In a heavy saucepan, add the oil to medium heat
Add the noodles and cook until they soften and get toasted (don't let them burn). Stir often
Add the rice and mix with the noodles
Pour in the coke, water and bullion cube. Let the liquid come to a boil. Test the liquid for seasoning and make the necessary corrections.
Place a lid on top and reduce the heat down to low. Cook for 10-15 minutes or until the liquid has evaporated
Remove from heat, fluff with a fork
Mix in the raisins and almonds
Garnish with the green onion
