Melt chocolate in a double boiler, let it cool for 2-3 minutes
Place mascarpone cream in a bowl, mix with sugar, vanilla, and melted chocolate using a spatula or whisk
In another bowl, whip the whipping cream until stiff peaks form
Fold in HALF of the whipped cream into the mascarpone cream mixture. Fold it in 2-3 batches gently so the whipped cream does not deflate
The other half the whipped cream will be used for layering
Assembly
Place chocolate graham crackers in the bottom of an 8x8 square glass dish. If pieces don't fit, break them up so they form a single layer and cover the whole bottom surface
Spread half the chocolate mascarpone cream over the cookies
Spread half of the whipped cream over the mascarpone cream
Place another layer of chocolate graham crackers on top of the whipped cream. If pieces don't fit, break them up so they form a single layer and cover the whole surface
Spread the remaining chocolate mascarpone over the cookies
Spread the remaining whipping cream over the mascarpone cream
Top with shaved chocolate
Refrigerate for 6-8 hours or overnight
