For Crust
4sheets refrigerated pie dough2 boxes
For Filling
4egg yolks
114 oz can sweetened condensed milk
1/2cupfrozen passion fruit pulpthawed
For Meringue Topping
4egg whites
1 1/4cupsgranulated sugar
Instructions
Preheat oven to 350°F.
Spray mini muffin tins with nonstick spray.
Cut circles from pie dough and press into muffin tin cavities, shaping up the sides.
Prick the bottoms with a fork.
Bake for 10 minutes.
Remove and cool slightly.
Make the filling:
In a blender, combine egg yolks, passion fruit pulp, and condensed milk. Blend until smooth.
Pour filling into each crust.
Bake for 8–10 minutes or until set.
Remove and cool completely.
Make the meringue:
Preheat oven to 400°F, then turn it OFF.
Beat egg whites until soft peaks form.
Slowly add sugar and continue beating until stiff, glossy peaks form.
Pipe or spoon meringue onto pies.
Place in warm (turned OFF) oven for 5 minutes until lightly set.
Refrigerate for at least 1 hour before serving.
Serve and enjoy.
Notes
Frozen passion fruit pulp works perfectly and is easier to find than fresh
Thaw the pulp completely before blending for a smooth filling
Do not overbake; the center should be set but still slightly soft
For mini pies, keep a close eye; they bake faster than a full pie
For the meringue topping:
Make sure the bowl and beaters are completely clean and dry
Add sugar slowly to get stiff, glossy peaks
The oven should be OFF but warm, this gently sets the meringue without burning
Watch closely, meringue can brown quickly
Chill for at least 1 hour before serving for best texture
Can be made as one large pie; adjust baking time to about 15 minutes for the filling
