- 2 cups Quinoa, cooked
- 1/2 bunch Kale, stems removed and leaves chopped
- 1 head Broccoli, chopped
- Juice of 1 Lemon
- 1/3 cup Parmesan Cheese, shredded
- 1/2 Red Onion, chopped
- 1 teaspoon Garlic, minced
- 1/4 cup Water
In a large skillet, begin to heat oil. Add chopped onions, broccoli and garlic. Sauté until slightly tender.
Add chopped kale, along with 1/4 cup of water. Lower heat and cover.
Cook for 2-3 minutes, oruntil kale has wilted and turned bright green
Stir in cooked quinoa, lemon juice and parmesan cheese.
Remove from heat and serve immediately.
