Ingredients

For Maple Roasted Peaches

  • 2 peaches
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • Salt + Pepper

For Salad

  • 15 oz Baby greens
  • 1/4 cup toasted almonds
  • 2 tablespoons dried cranberries
  • 1/2 cup cherry tomatoes
  • 1/2 cup cucumbers
  • 1 oz parmesan cheese

  • Salt + Pepper
  • Vinaigrette
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons maple syrup
  • 2 teaspoons dijon mustard
  • Salt + Pepper

Instructions

  • For Maple Roasted Peaches
  • Preheat oven to 400 degrees Fahrenheit
  • Cut peaches in half. Remove the pit and cut into slices
  • In a bowl toss the peaches with the maple syrup, olive oil, salt and pepper until the peaches are completely coated
  • Spread peaches on a greased sheet pan and roast for 15 minutes
  • Flip the over and roast for 15 minutes more
  • Remove from oven and let it cool for a few minutes
  • In a small bowl, place all the vinaigrette ingredients together and mix vigorously using a whisk
  • In a salad bowl place all the salad ingredients and slowly add the vinaigrette until your desired flavor is achieved (you may not need all the vinaigrette)
  • Serve and enjoy!
