Plantains Foster Ice Cream Tacos

These delicious Ice Cream tacos are filled with warm plantains foster and topped with yummy Chips Ahoy! The perfect dessert or snack with a latin twist

Ingredients

For Tacos

  • 4 Corn tortillas
  • Sugar +Cinnamon

For Plantains Foster

  • 1 Ripe Plantain
  • 1/4 Cup butter
  • 6 tablespoons brown sugar
  • 1 teaspoon rum or vanilla extract optional
  • 1/2 teaspoon cinnamon

Assembly

  • 6 Chips Ahoy! Cookies
  • 2 cups Vanilla Ice Cream

Instructions

  • For taco cups
  • Preheat oven to 400 Degrees F
  • Flip over a muffin tin and spray with nonstick spray
  • Soften the tortillas but placing them inside a damp paper towel and microwaving them for 30 seconds
  • Place the soft tortillas on a cutting board and spray them with nonstick spray
  • Sprinkle with sugar and cinnamon
  • Flip the tortilla over and repeat the same process with the cooking spray, sugar, and cinnamon
  • Nestle a tortilla in the space between 4 cups of the muffin tin to form a bowl shape
  • Repeat with the other tortillas
  • Bake for 12-15 minutes or until crisp
  • Remove from oven and let them cool
  • For Plantains Foster
  • Slice the plantain
  • Place a skillet over medium heat and add the butter and brown sugar
  • When the butter and brown sugar melts, add the plantain slices and cook until the plantains have softened. About 4-5 minutes. Stir often
  • Add the rum extract and cinnamon. Stir until combined
  • Assembly:
  • Place the taco cups on a serving platter
  • Add 1-2 scoops of ice cream
  • Add the hot bananas foster
  • Top with crumbled Chips Ahoy!
  • Serve immediately
  • Enjoy!!
