Ingredients

For Jalapeño Sauce

  • 1 Large onion sliced, or 2 small ones
  • 2 Tablespoons butter or margarine
  • 2 Slices Pickled Jalapeño
  • 1 Teaspoon Pickled Jalapeño Juice from the jar
  • Salt + Pepper
  • 2 Cups Whipping Cream

For Gratin

  • 2 Big Baking Potatoes or 3 medium ones
  • 1 1/2 cups shredded cheese you can use a blend or mozzarella
  • 2 Tablespoons grated Parmesan Cheese
  • Salt + Pepper

Instructions

  • Preheat Oven to 350 Degrees Fahrenheit

For Jalapeño Sauce

  • In a big skillet, melt the butter or margarine over medium heat
  • Toss in the onions and cook until they soften
  • Add the jalapeño slices and the jalapeño juice. Cook for 1-2 minutes
  • Pour in the whipping cream and let it simmer over low heat for 5 minutes

For Gratin

  • Peel potatoes and slice into thin slices
  • Arrange them in a scalloped shape, one potato slice overlapping the other in a medium casserole pan
  • Season with salt and pepper
  • Add 1/3 of the Jalapeño Sauce and top with 1/2 cup of the cheese
  • Repeat the same pattern for 2 more layers
  • Grate parmesan cheese on top
  • Cover with foil
  • Bake in the oven for 45 minutes to 1 hour 15 minutes or until fork tender
  • Uncover
  • Broil for 1-2 minutes or until the top is brown and bubbly
  • Let it cool 10 minutes before cutting
  • Enjoy!

Notes

You can make  2 layers on an 8x8" square pan.  You can also bake in 3 layers on a medium casserole pan
