Ingredients
For Mojito
Juice of 2 limes
2Teaspoonsof sugar
15leavesMint
1Part white rumoptional
3Parts of club soda
1Cupof Rhubarb Juice*
Ice
For Rhubarb Juice
1Lb. of Rhubarbcut into chunks
1/4Cupof sugar or Steviaor more if needed
1cupWaterapproximately
Instructions
For Rhubarb Mojito
Using a mortar or a regular bowl, add the mint and sugar and "bruise it" using a pestle or a spoon so the mint releases the delicious aroma. Pour in the lime juice and mix
Divide this mixture between 2 glasses
Add 1/2 Cup of Rhubarb Juice into each glass
Add one part of rum and enough ice to cover 3/4 of the glass
Pour in the club soda and garnish with a Rhubarb stick and a mint leaf
Stir and enjoy!
For Rhubarb Juice
Add rhubarb and sugar into a large pot. Pour in enough water to cover it
Cook on medium low-heat for 10-15 minutes or until the rhubarb breaks down
Test for seasoning and if necessary add more sugar
Remove from heat and let it cool
Strain
