Rhubarb Mojito - delicious sweet cocktail that's refreshing and has lots of flavor. Enjoy entertaining friends and family with this tasty tropical drink.

Ingredients

For Mojito

  • Juice of 2 limes
  • 2 Teaspoons of sugar
  • 15 leaves Mint
  • 1 Part white rum optional
  • 3 Parts of club soda
  • 1 Cup of Rhubarb Juice*
  • Ice

For Rhubarb Juice

  • 1 Lb . of Rhubarb cut into chunks
  • 1/4 Cup of sugar or Stevia or more if needed
  • 1 cup Water approximately

Instructions

For Rhubarb Mojito

  1. Using a mortar or a regular bowl, add the mint and sugar and "bruise it" using a pestle or a spoon so the mint releases the delicious aroma. Pour in the lime juice and mix
  2. Divide this mixture between 2 glasses
  3. Add 1/2 Cup of Rhubarb Juice into each glass
  4. Add one part of rum and enough ice to cover 3/4 of the glass
  5. Pour in the club soda and garnish with a Rhubarb stick and a mint leaf
  6. Stir and enjoy!

For Rhubarb Juice

  1. Add rhubarb and sugar into a large pot. Pour in enough water to cover it
  2. Cook on medium low-heat for 10-15 minutes or until the rhubarb breaks down
  3. Test for seasoning and if necessary add more sugar
  4. Remove from heat and let it cool
  5. Strain

Recipe Notes

*The Rhubarb puree can be eaten by itself with a spoon
