Ingredients

For Mojito

  • Juice of 2 limes
  • 2 Teaspoons Sugar
  • 15 leaves Mint
  • 1 Part white rum optional
  • 3 Parts of club soda
  • 1 Cup of Rhubarb Juice*
  • Ice

For Rhubarb Juice

  • 1 Lb Rhubarb cut into chunks
  • 1/4 Cup Sugar or more if needed
  • 1 cup Water approximately

Instructions

For Rhubarb Mojito

  • Using a mortar or a regular bowl, add the mint and sugar and "bruise it" using a pestle or a spoon so the mint releases the delicious aroma. Pour in the lime juice and mix
  • Divide this mixture between 2 glasses
  • Add 1/2 Cup of Rhubarb Juice into each glass
  • Add one part of rum and enough ice to cover 3/4 of the glass
  • Pour in the club soda and garnish with a Rhubarb stick and a mint leaf
  • Stir and enjoy!

For Rhubarb Juice

  • Add rhubarb and sugar into a large pot. Pour in enough water to cover it
  • Cook on medium low-heat for 10-15 minutes or until the rhubarb breaks down
  • Test for seasoning and if necessary add more sugar
  • Remove from heat and let it cool
  • Strain

Notes

*The Rhubarb puree can be eaten by itself with a spoon
