Ingredients

  • 1 Lb ground Turkey Breast
  • 1 Medium Onion chopped
  • 1 Red Pepper chopped
  • 2 Medium tomatoes chopped (may substitute for canned diced tomatoes)
  • 2 Tablespoons capers drained
  • 1/2 Cup Olives pitted and halved (you may add more)
  • 1/2 Cup Raisins
  • 1 Teaspoon Cumin
  • 1 Teaspoon tomato paste
  • 1 Cup Ketchup
  • 1 Tablespoon Olive Oil
  • Salt + Pepper to taste

Instructions

  1. Heat the Olive Oil in a large skillet
  2. Sautee the onions, tomatoes and peppers over medium heat until softened. About 5 minutes
  3. Add salt, pepper and cumin
  4. Toss in the turkey and using a wooden spoon, break the turkey up in small pieces while it cooks
  5. When the turkey is no longer pink, add the capers, olives and raisins. Mix well
  6. Pour the tomato paste and ketchup. Cook over low heat until the liquid reduces and thickens. About 5 minutes
  7. Check for seasoning and make the necessary corrections
  8. Serve and enjoy!
