Warm and filling, this easy to make Lemon Parmesan Quinoa Salad is perfect as a side or add a protein for a quick and easy dinner idea.
In a large skillet, begin to heat oil. Add chopped onions, broccoli and garlic. Sauté until slightlytender.
Add chopped kale, along with 1/4 cup of water. Lower heat and cover.
Cook for 2-3 minutes, oruntil kale has wilted and turned bright green
Stir in cooked quinoa, lemon juice and parmesan cheese.
Remove from heat and serve immediately.
