Heat the oil in a deep saucepan until it reached 350 degrees F.
Make 1-2 vertical slits on the plantain to peel it easily
Slice it into 1 inch chunks
Deep fry for 4-5 minutes or until golden. Remove from heat and place over paper towels to drain the excess oil
Place the chunks one at a time in a citrus squeezer and squeeze to make the "cup" shape. Alternately, you can also place them in a mini muffin tins and use the handle of a wide wooden spoon to make the indentations in the middle
Refry the cups again for 3-4 minutes or until crisp. Drain on paper towels and fill
For Spicy Guacamole
Mash the Avocados using a fork. Add salt, pepper, tomatoes, cilantro, and jalapenos. Mix until combined
Add the 1 tablespoon of lime juice and mix. If needed, add more lime juice
Finish the guacamole by added the TABASCO® Sauce
Assembly
Using a spoon, stuff the spicy guacamole in the cavities of the plantain cups. Garnish with a cilantro leaf and serve.
Notes
*You can fry the plantain cups in advance and leave on the counter. When ready to serve, place them in a 375 F. oven for a few minutes to crisp up.
