St. Louis Gooey Butter Cake Recipe

Ingredients

For Crust

  • One Box of Vanilla or Yellow Cake Mix
  • 1 Egg
  • 4 tablespoons unsalted butter melted, 1/2 stick

For Middle

  • 1 Cup Semi-Sweet Chocolate Chips
  • 1/2 Cup sweetened Coconut Flakes
  • 1 - 8 oz block of Cream Cheese at room temperature
  • 2 eggs
  • 4 cups confectioners sugar
  • 1 teaspoon vanilla
  • 1 pinch of salt

Topping

  • Confectioners Sugar

Instructions

  • Preheat Oven o 350 degrees Fahrenheit
  • Spray a 9x13" rectangular baking dish with non-stick spray
  • In a bowl, mix the cake mix, egg, and melted butter
  • Press this mixture on the bottom of the baking dish
  • Sprinkle the chocolate chips and coconut flakes on top
  • In another bowl, mix the cream cheese with a mixer until fluffy. About 3 minutes
  • Add the one egg at a time beating well after each addition
  • Lower the speed and slowly add the confectioners sugar, salt, and the vanilla
  • Mix until everything is creamy
  • Place the filling on top the coconut and chocolate chips
  • Spread evenly
  • Bake for 35-45 minutes or until the top has browned
  • Remove from the oven and let it cool completely before cutting
  • Sprinkle with confectioners sugar
  • Cut into squares
  • Enjoy!
