Turkey Quinoa One Pot Meal (Healthy 20-Minute Dinner)

Ingredients

  • 1 cup Quinoa cooked
  • 1 lb. Ground Turkey Breast
  • 1/2 Large Onion chopped
  • 1/2 cup Red pepper chopped
  • 1/2 cup Mushrooms chopped
  • 2 Tomatoes chopped
  • 1/2 cup Carrots chopped
  • 1/2 teaspoon Cumin
  • 1 cup Tomato Puree
  • 1/2 cup Green Peas frozen
  • 1 tablespoon Extra Virgin Olive Oil
  • Salt + Pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat
  • Add onions, red pepper, mushrooms, carrots, and tomatoes. Cook for about 5 minutes, until softened
  • Season with salt and cumin
  • Add ground turkey and cook, breaking it apart with a spoon, until fully cooked, about 5–6 minutes. Drain excess liquid if needed
  • Stir in tomato puree, cooked quinoa, and frozen peas
  • Reduce heat to low, cover, and cook for 5 minutes to allow flavors to blend
  • Taste and adjust seasoning as needed. Serve warm

Notes

*If you don’t have cooked Quinoa simply boil 1 cup of water with a little salt. Then sprinkle in 1/2 Cup of Quinoa and let it boil again. Place a lid and lower the heat. Cook for about 10-15 minutes more
