In a skillet over medium heat, place the oil. Sautee the onions until translucent (4-5 minutes). Add the tomato and cook until softened (5 minutes). Mix in the ketchup, salt and pepper and cook for 2-3 minutes
For Filling
Preheat Oven to 350 degrees Fahrenheit
Cut the top off the peppers and remove the seeds inside. Save the tops
In a bowl, combine the Quinoa, Turkey, Egg, Italian Seasoning, Salt and Pepper and add about 1/2 cup to 1 cup of the sauce. Mix until combined
Assembly
Pour the sauce in the bottom of the baking dish
Place the stuffed peppers on top
Bake for 30-45 minutes or until the turkey and quinoa are cooked. Top with the sauce
