Ingredients

  • 1 cup unsalted butter room temperature
  • 1 1/2 cups brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped macadamia nuts
  • 1 cup white chocolate chips

Instructions

Prep

  • Preheat oven to 350°F. Line baking sheets with parchment paper.

Dry Ingredients

  • In a bowl, whisk flour, baking soda, and salt.

Make Dough

  • Beat butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in vanilla.
  • Add dry ingredients and mix just until combined.
  • Fold in macadamia nuts and white chocolate chips.

Bake

  • Scoop dough onto prepared baking sheets, spacing apart.
  • Bake 9 to 10 minutes, until edges are lightly golden and centers still soft.
  • Cool on baking sheet 10 minutes, then transfer to rack.

Notes

  • Do not overbake for chewy cookies.
  • Cookies continue setting as they cool.
  • Chill the dough for 30 minutes for thicker cookies.
  • Store airtight up to 4 days.
  • Freeze dough balls up to 2 months
