Ingredients

For Salmon

  • 4-6 salmon filets
  • 2 lemons
  • 1/2 cup olive oil
  • 2 cloves garlic crushed
  • salt + pepper
  • 6-8 oz fresh green beans optional

For Tahini Sauce

  • 1/3 cup prepared Tahini
  • 2 tablespoons water
  • 2-3 tablespoons unflavored greek yogurt
  • Juice of one lemon
  • 1 clove of garlic minced
  • Salt and pepper to taste

Garnish

  • Parsley minced
  • Pine nuts toasted

Instructions

  1. For Salmon
  2. Preheat oven to 400 degrees Fahrenheit
  3. Place salmon filets and green beans on a foil-lined sheet pan
  4. In a bowl combine the juice of ONE Lemon, the olive oil, garlic, salt and pepper
  5. Slice the other lemon into thin slices
  6. Add the lemon sauce to each salmon fillets making sure all sides are coated. Add the remaining sauce to the green beans and mix well
  7. Place lemon slices over salmon
  8. Bake for 12-14 minutes and broil for 3-4 minutes or until salmon is completely done
  9. For Tahini Sauce
  10. Mix all the ingredients together. If sauce is too thick, add a bit more water or lemon juice
  11. Assembly
  12. Serve salmon over cooked couscous or rice and the tahini sauce on the side. Garnish with parsley and pine nuts
