Ingredients

For Salmon

  • 4-6 salmon filets
  • 2 lemons
  • 1/2 cup olive oil
  • 2 cloves garlic crushed
  • salt + pepper
  • 6-8 oz fresh green beans optional

For Tahini Sauce

  • 1/3 cup prepared Tahini
  • 2 tablespoons water
  • 2-3 tablespoons unflavored greek yogurt
  • Juice of one lemon
  • 1 clove garlic minced
  • Salt and pepper to taste

Garnish

  • Parsley minced
  • Pine nuts toasted

Instructions

  • For Salmon
  • Preheat oven to 400 degrees Fahrenheit
  • Place salmon filets and green beans on a foil-lined sheet pan
  • In a bowl combine the juice of ONE Lemon, the olive oil, garlic, salt and pepper
  • Slice the other lemon into thin slices
  • Add the lemon sauce to each salmon fillets making sure all sides are coated. Add the remaining sauce to the green beans and mix well
  • Place lemon slices over salmon
  • Bake for 12-14 minutes and broil for 3-4 minutes or until salmon is completely done
  • For Tahini Sauce
  • Mix all the ingredients together. If sauce is too thick, add a bit more water or lemon juice
  • Assembly
  • Serve salmon over cooked couscous or rice and the tahini sauce on the side. Garnish with parsley and pine nuts
