Ingredients

For Pumpkin Hummus*

  • 1 Can of Garbanzo Beans drained
  • 1/2 Cup Tahini
  • 2 Teaspoons Cumin or to taste
  • 1/2 Teaspoon Paprika
  • 1 Teaspoon Fresh lemon juice
  • 1 Clove Garlic crushed
  • 1/4 Cup Extra Virgin Olive Oil
  • 1/2 Cup Pumpkin Puree
  • Salt And Pepper To Taste

For Pizza

  • Canned Refrigerated Pizza Dough store bought pizza dough or homemade
  • ¼ Cup Chopped Red Onions
  • ¼ Cup Chopped Tomatoes
  • ½ Cup Goat Cheese crumbled
  • 1/4 Cup Spinach chopped
  • Salt and Pepper
  • Olive Oil

Instructions

  1. For Pumpkin Hummus
  2. Place all ingredients on a food processor. Process until smooth
  3. Taste for seasoning, add more if needed
  4. For Pizza
  5. Preheat oven to 425 degrees Fahrenheit
  6. Line a sheet pan with parchment paper
  7. Place the pizza dough on top of the parchment paper
  8. Bake for 5 minutes
  9. Remove from oven
  10. Spread pumpkin Hummus over the the pizza
  11. Add the veggies
  12. Sprinkle in the cheese
  13. Add salt and pepper
  14. Drizzle olive oil on top
  15. Bake for 5-7 minutes or until cheese has toasted up
  16. Enjoy!

Recipe Notes

*If you're in a hurry you can use store bought hummus and just add 1/2 cup of pumpkin puree.
