Ingredients

  • 1/2 cup Honey
  • 1 Green Apple peeled and cored
  • 1 Egg
  • 1 1/4 cup plus 1 tablespoon All Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 cup Brewed Coffee or Tea
  • 5 tablespoons Vegetable oil
  • 1/3 cup Sugar
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/8 teaspoon Ground cloves
  • Pinch of salt
  • 1/2 cup Chopped Nuts optional

Instructions

  1. Preheat oven to 350 Degrees Fahrenheit
  2. Oil the inside of the jars
  3. Place jars on a rimmed sheet pan
  4. Grate the apple and squeeze out to remove excess liquid
  5. Place grated apple in a bowl. Mix with egg, coffee, oil and honey
  6. In another bowl mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves and salt and nuts if using
  7. Pour the wet ingredients into the dry ones and mix with a whisk until combined. Do not overmix
  8. Pour the mixture into the jars filling them HALFWAY (to prevent overflowing)
  9. Bake for 20-30 minutes or until golden and springy on top
  10. Remove from oven and let them cool
