Ingredients

  • 1/2 cup Honey
  • 1 Green Apple peeled and cored
  • 1 Egg
  • 1 1/4 cup plus 1 tablespoon All Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 cup Brewed Coffee or Tea
  • 5 tablespoons Vegetable oil
  • 1/3 cup Sugar
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/8 teaspoon Ground cloves
  • Pinch of salt
  • 1/2 cup Chopped Nuts optional

Instructions

  • Preheat oven to 350 Degrees Fahrenheit
  • Oil the inside of the jars
  • Place jars on a rimmed sheet pan
  • Grate the apple and squeeze out to remove excess liquid
  • Place grated apple in a bowl. Mix with egg, coffee, oil and honey
  • In another bowl mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves and salt and nuts if using
  • Pour the wet ingredients into the dry ones and mix with a whisk until combined. Do not overmix
  • Pour the mixture into the jars filling them HALFWAY (to prevent overflowing)
  • Bake for 20-30 minutes or until golden and springy on top
  • Remove from oven and let them cool

Notes

This recipe yields for one loaf.
