Ingredients

  • 2 cups Black or red Quinoa cooked
  • 15 oz Black beans from a can
  • 8 oz Button mushrooms diced in small pieces
  • 1 in Red Pepper diced small pieces
  • 1/2 Red Onion chopped
  • 1/4 cup Cilantro leaves chopped
  • 1 tablespoon Lime zest
  • 1/4 cup Lime juice about 1 large lime
  • 2 tablespoons Smoked paprika
  • 1 Tablespoon Ancho chili powder
  • 1 -2 tablespoon Cornstarch more if needed
  • Salt and Pepper to taste

For Serving

  • 8 Hamburger Buns optional
  • 12 Pickles optional
  • 6 Tomato Slices optional

Instructions

  1. Blend half of black beans into paste
  2. In a bowl, mix all the ingredients together
  3. Shape into patties
  4. Heat olive oil in a skillet over medium heat
  5. Cook patties for 3-4 minutes on each side
  6. Serve them by themselves or inside a toasted bun
