2 cups Black or red Quinoa cooked 15 oz Black beans from a can 8 oz Button mushrooms diced in small pieces 1 in Red Pepper diced small pieces 1/2 Red Onion chopped 1/4 cup Cilantro leaves chopped 1 tablespoon Lime zest 1/4 cup Lime juice about 1 large lime 2 tablespoons Smoked paprika 1 Tablespoon Ancho chili powder 1 -2 tablespoon Cornstarch more if needed Salt and Pepper to taste For Serving 8 Hamburger Buns optional 12 Pickles optional 6 Tomato Slices optional
Blend half of black beans into paste
In a bowl, mix all the ingredients together
Shape into patties
Heat olive oil in a skillet over medium heat
Cook patties for 3-4 minutes on each side
Serve them by themselves or inside a toasted bun
