Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup brown sugar
  • 2 ripe bananas mashed with a fork
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup + 2 teaspoons whole milk or 2%
  • 1/4 cup vegetable oil
  • 1 large egg I used Horizon
  • 2 cups fresh blueberries

Instructions

  1. Preheat oven to 400 Degrees Fahrenheit
  2. Line a muffin tin with paper muffin liners
  3. In one bowl mix the brown sugar, flour, salt and baking powder. When mixed, add the blueberries and mix again
  4. In another bowl, mix the egg, mashed banana, milk and oil

  5. Add the liquid ingredients to the flour mixture and mix with a spoon until combined. DO NOT OVERMIX
  6. Spoon the batter into each muffin liner
  7. Bake for 15-20 minutes
  8. Enjoy!

Recipe Notes

*You can also use all-purpose flour if you want. If you do, reduce the milk to 1 cup
