Creamy Carrot Ginger Soup Recipe

Ingredients

  • 2 lbs . of Carrot peeled and sliced
  • 1 Medium Onion chopped
  • 1 Tb . of Ginger minced
  • 1 ts . of Thyme dried
  • 1 tb . of Olive Oil
  • 6 Cups of Vegetable Stock or chicken
  • Salt + Pepper to taste

Instructions

  1. In a heavy duty pot, heat Olive Oil at Medium Heat
  2. Stir in Carrots and Onions, cook until onion begins to soften (4 minutes)
  3. Add Thyme, salt, pepper and Ginger, cook for 10 minutes more
  4. Pour in Vegetable stock and let it simmer for 20 - 30 minutes or until the carrots are soft
  5. Puree soup in a blender. Check for seasoning
  6. Enjoy!
