Creamy Carrot Ginger Soup Recipe

- 2 lbs Carrot peeled and sliced
- 1 medium Onion chopped
- 1 Tb Ginger minced
- 1 ts Thyme dried
- 1 tb Olive Oil
- 6 Cups Vegetable Stock or chicken
- Salt + Pepper to taste
In a heavy-duty pot, heat olive oil at Medium Heat
Stir in carrots and onions, cook until onion begins to soften (4 minutes)
Add thyme, salt, pepper and Ginger, cook for 10 minutes more
Pour in Vegetable stock and let it simmer for 20 - 30 minutes or until the carrots are soft
Puree the soup in a blender. Check for seasoning
