Mango Fruit Roll Ups

This amazing Mango Fruit Roll Ups recipe requires only 1 ingredient and is the perfect kid friendly healthy snack for the lunchbox. Vegan and Gluten Free.

Ingredients

  • 1 1/4 cups Mango Pulp from 1 big or 2 medium mangoes

Instructions

  1. Preheat Oven to 160 Degrees F (or as low as your oven can go)

  2. Place mango pulp in the high-speed blender or food processor. Puree 

  3. Using a spatula, spread the puree onto a cookie sheet lined with silicone or parchment paper. Make sure you spread the puree evenly

  4. Place in the oven for 2-4 hours or until the mixture is dry. If mixture is not dry leave it longer 

  5. Carefully, peel off the paper and roll it using parchment paper. Cut into strips

  6. Keep them at room temperature in a zip top bag

  7. Enjoy!

Recipe Notes

You may use frozen mangoes. Simply thaw before pureeing.
