Ingredients

  • 1 bag Green Giant Riced Cauliflower frozen
  • 1 Onion chopped
  • 1/2 Red Pepper chopped
  • 2 cloves Garlic minced
  • 1 lb Uncooked Shrimp peeled and deveined
  • 2 tablespoons Parsley chopped
  • 3/4 cup Low Sodium Chicken Stock
  • 2 teaspoons Curry Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • Juice from Half a Lime
  • 2 teaspoons Olive Oil extra virgin
  • Salt + Pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat

  2. Add the onions and pepper. Season with salt and pepper and cook for 3-4 minutes or until they soften. Add the garlic and cook for 1 more minute
