Ingredients

  • 2 1/4 cups All Purpose Flour
  • 1 Lipton Tea Bag
  • 3/4 cup Swerve Sweetener
  • 1/2 teaspoon Salt
  • 1 tablespoon Baking Powder
  • 2 Vital Farms Pasture-Raised Eggs
  • 2 teaspoons Pure Vanilla Extract
  • 1 stick Butter melted
  • 1 cup 2% Milk
  • 1 1/2 tablespoons Vinegar

Instructions

  1. Preheat oven to 400 degrees F.

  2. Line muffin tin with paper liners

  3. Mix the milk with the vinegar and let it sit for 5 minutes (this is make low-fat buttermilk)

  4. Sift the contents of the tea bag, flour, salt and baking powder together. Pour dry ingredients into a bowl and mix in the Swerve Sweetener

  5. In another bowl, whisk the buttermilk, eggs, and cooled melted butter

  6. Mix in the wet ingredients into the dry. Mix with a whisk until just combined. Do not overmix

  7. Pour batter into muffin tins filling them 3/4 of the way.

  8. Bake for 17-18 minutes or until browned on top.

  9. Enjoy!
