8ozof Arugulacleaned and dried
1/2cupCherry Tomatoes
1/2CupYellow Tomatoes
1/2CupCorn
4Sticks of Hearts of Palmsliced
1/2Cucumbersliced
1Granny Smith Applesliced
For Dijon Vinaigrette
1/2CupOlive Oil
1/4CupRice Vinegar
1TeaspoonSugar
2teaspoonsDijon MustardI like they grainy one
1/8Onionchopped
Salt and Pepper
Instructions
For Salad
Combine all ingredients together
For Dijon Vinaigrette
Place all ingredients together in a blender and blend until creamy and combined
Assembly:
Place little by little the dijon vinaigrette into the salad until desired flavor is achieved. This vinaigrette is enough to make 2-3 salads so you probably won't use it entirely
