Apple And Tomato Arugula Salad
This Apple and Tomato Arugula salad is easy to make, delicious and very customizable. I added some latin flair by using hearts of palm and corn. It gives the salad sweetness and different kinds of texture. Since the tomatoes are cherry, there’s not much chopping involved so you can assemble this salad in a flash. The dijon vinaigrette is made quickly in the blender using staple ingredients.
What if I told you that with this post, you will have an entire meal from start to finish made in 15 minutes or less? I am not lying!! For real! Start your timer because we are having a delicious Apple and Tomato Arugula Salad with homemade vinaigrette. Sounds good, doesn’t it?
The reason why I choose to pair this delicious pasta dish with an Apple And Tomato Arugula Salad with a savory pasta it’s because there’s a balance of flavor. The pasta dish is rich, so I cut it down with a little acidity by adding a granny smith apple and a homemade vinaigrette. On one side I get a comforting bite and in the other, I have a tangy crunchy one. Amazing.
Summer is here I am definitely looking forward to easy dinners and spending the rest of the day outside with my 2 girls. Having a quick bite does not mean I have to skimp on flavor nor quality.

- For Salad
- 8 oz of Arugula cleaned and dried
- 1/2 Club of Cherry Tomatoes
- 1/2 Cup of Yellow Tomatoes
- 1/2 Cup of Corn
- 4 Sticks of Hearts of Palm sliced
- 1/2 Cucumber sliced
- 1 Granny Smith Apple sliced
- For Dijon Vinaigrette
- 1/2 Cup of Olive Oil
- 1/4 Cup of Rice Vinegar
- 1 Teaspoon of sugar
- 2 teaspoons of Dijon Mustard I like they grainy one
- 1/8 of an onion
- Salt and Pepper

For Salad

Combine all ingredients together

For Dijon Vinaigrette

Place all ingredients together in a blender and blend until creamy and combined

Assembly:

Place little by little the dijon vinaigrette into the salad until desired flavor is achieved. This vinaigrette is enough to make 2-3 salads so you probably won't use it entirely

Save the rest of the vinaigrette in the fridge
