Ingredients

  • 1 whole chicken cut into 8 pieces
  • 2/3 cup plain yogurt
  • 2/3 cup apricot jam
  • 1 can apricot halves drained
  • 1/2 teaspoon cumin
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat oven to 375°F.
  • Place chicken pieces in a baking dish.
  • Season generously with salt and black pepper.
  • Bake uncovered for 45 minutes until the skin becomes crispy and golden.
  • In a bowl, whisk together the yogurt, apricot jam, and cumin until smooth.
  • Remove chicken from the oven.
  • Add the apricot halves around the chicken.
  • Spoon the apricot yogurt sauce evenly over the chicken pieces.
  • Return to the oven and bake for 15 minutes more until bubbly and caramelized.
  • Remove from the oven and let rest for 5 minutes before serving.

* Baking the chicken first without the sauce helps create crispy skin.
