Baked Brie with Figs, Honey and Rosemary
This Baked Brie with Figs is topped with honey, fresh rosemary, roasted pistachios, and juicy figs. An easy, elegant appetizer ready in about 25 minutes.

1 wheel of brie cheese 5-6 Black Mission Figs - halved or quartered 1 Spring rosemary 2 Tablespoons roasted Pistachios Honey Salt + Pepper
Preheat oven to 375 degrees Fahrenheit
Line a sheet pan with parchment paper
Place the wheel of brie in the sheet pan
Top with 5-6 crushed rosemary leaves
Top with figs, salt, and pepper
Drizzle with honey
Bake for 20-22 minutes or until the cheese has softened
Remove from oven and sprinkle in pistachios
Add some more honey if needed

Use a whole wheel of Brie and leave the rind on so it holds its shape while baking.
Black Mission figs work beautifully, but any ripe fresh figs may be used.
Add the pistachios after baking, so they stay crunchy.
Bake just until the Brie is soft and warm in the center. Avoid overbaking, or the cheese may split and leak.
Serve immediately with crackers, crostini, sliced baguette, or apple and pear slices.
For extra sweetness, drizzle additional honey over the Brie just before serving.
